I’ve been trying to get back into studying and the last couple weeks been prepping myself for the upcoming uni semester. What could be better snack to keep your brain functioning properly and mind concentrated than a fresh from the oven, warm and moist banana bread? (Note: Procastibaking)
The other day I received a package of Your Tea green tea matcha powder in the mail to try out and share my experiences. I’ve been a huge fan of matcha lattes for ages, so naturally I was super excited about this. Matcha tea has a huge amount of health benefits and is said to have a calming and relaxing effect on mind. The caffeine in matcha tea is also different to the caffeine found in regular coffee, and it can sustain energy levels without the adverse effects of regular caffeine.
Might do a separate post about the health effects of matcha tea, anyone interested in that?
Not just for studying, this upgraded, naturally gluten free banana bread is the perfect snack, breakfast, lunch or dinner, whenever you need a little wholesome energy boost!
Here are the instructions, happy baking!
Green Tea Matcha Banana Bread
3+1 ripe spotty bananas
1 cup buckwheat flour
½ cup oat flour
2 tbsp coconut sugar
1 tsp green tea matcha powder*
½ tsp ground cardamom
1 tsp baking powder
½ baking soda
1 tsp vanilla extract
½ cup plant milk
3 tbsp virgin coconut oil
Preheat oven to 190°C and grease a loaf pan with tiny bit of coconut oil.
Mash three of the bananas with a fork and set aside.
In a large bowl mix the flours, coconut sugar, matcha powder, cardamom, baking powder and baking soda, stir well to combine.
Add the mashed bananas, vanilla extract, plant mylk and coconut oil. Stir well to combine. Pour into a loaf pan, top with one halved banana and bake in the oven for about 30-35 minutes or until golden. Let cool a bit before cutting. Serve and ENJOY!
