In need of a shortcut to a perfectly crispy and thin pizza crust? I have one: Tortillas. I came up with this idea one night when starting to prep dinner and was feeling a bit lazy. I love cooking but sometimes prefer things simple, anyone else?
I’ve shared two ‘traditional’ gluten free flour pizza crust recipes before (easy oat pizza crust, sweet potato pizza crust) but for a slightly lighter version tortillas make an excellent option. I topped mine with current summer favorites such as cherry tomatoes, sweet corn, fresh pineapple and avocado. Added chickpeas for protein (+ iron), topped with hot and spicy sriracha sauce. These vegan and gluten free Pizza Tacos are super easy summer night saviour! Feel free to use/add any other extra toppings of preference. I only hope you’ll love them as much as I do 🙂

Vegan Pizza Tacos
(makes 6 tacos)
6 gluten free corn tortillas/tacos
6 tsp tomato puree
200g canned chickpeas
200g cherry tomatoes, halved
200g fresh pineapple, chopped
corn kernels of one corn cob
1 ripe avocado
2-3 tbsp sriracha sauce
+ optional dried oregano, basil or any other spices
Start by preheating oven to 200°C and line a baking sheet with parchment paper. Place the tacos on the baking sheet. Spread one tsp of tomato puree evenly over each taco. Sprinkle over the chickpeas, halved cherry tomatoes, pineapple chunks, corn kernels and diced avocado. Top with sriracha and additional spices. Pop in the oven for about 10-15 minutes. Serve and ENJOY!
